Healthy Fried Chicken - My Mother In Law's "Fried Baked Chicken"


Everyone loves fried chicken or at least I know we do in the South. The problem is that it can be horribly unhealthy with all the oil it gets submerged into. My mother in law passed on one of her recipes to me for what she calls Fried-Baked Chicken. It is a delicious, healthy alternative way of making the oh so yummy fried chicken we love.


Ingredients / Items Needed
  • 2 Tbsp oil
  • Chicken (You can use breasts, thighs or wings)
  • Baking sheet or pan
  • 1 cup Milk
  • 1 Egg
  • 1 cup Flour
  • 2 bowls
  • Aluminum Foil (optional)
  • Your Favorite Seasoning (I always use the no MSG Everglades Seasoning)

Instructions
  • Pour 2 Tbsp of oil onto baking sheet and spread around by tilting the sheet back and forth. This should create a very thin layer of oil on the whole sheet. For easier cleanup, you can also line the baking sheet with aluminum foil.
  • In one bowl, mix together 1 egg and 1 cup of milk.
  • In a different bowl, mix together 1 cup of flour and enough of your seasoning to taste.
  • Take each piece of chicken, dip in the liquid mixture and then into the dry mixture.
  • Place chicken on pan or sheet and place in oven.

Cook Time & Temperature
  • 375 degrees Fahrenheit  
  • 45 minutes to an hour

**For a nice crispy outside, you can rotate the chicken half way through the cook time.
